Ingredients
  

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 3 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup celery, sliced
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 leaf bay leaf
  • to taste salt and pepper
  • 2 tbsp all-purpose flour (optional, for thickening)
  • to taste fresh parsley, chopped for garnish

Method
 

  1. Heat olive oil in a large Dutch oven over medium-high heat. Season beef cubes with salt and pepper, then brown in batches for 5-7 minutes.
  2. Remove browned beef and set aside. Sauté chopped onion in the same pot for 3-4 minutes until soft, then add minced garlic and cook for 1 minute.
  3. Return the beef to the pot, stir in tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf, then pour in beef broth, scraping browned bits from the bottom.
  4. Add carrots, potatoes, and celery. Bring to a boil, cover, and simmer for 1.5 to 2 hours.
  5. If desired, mix flour with water to create a slurry, then stir into the stew during the last 15 minutes of cooking to thicken.
  6. Remove the bay leaf, adjust seasoning, garnish with parsley, and serve hot.
