Ingredients
  

  • 450 g Ground Beef
  • 1 Onion finely chopped
  • 4 Carrots sliced into rounds
  • 4 Large Potatoes diced into bite-sized pieces
  • to taste Salt
  • to taste Pepper
  • as needed Olive Oil for sautéing
  • enough to cover Chicken or Vegetable Broth

Method
 

  1. Heat olive oil in a large pot over medium heat and sauté the chopped onions until translucent.
  2. Add the ground beef, breaking it apart with a wooden spoon, and cook until browned.
  3. Stir in the sliced carrots and diced potatoes, coating them with the beef mixture.
  4. Pour in enough broth to cover the ingredients.
  5. Cover the pot and simmer on low heat for about 45 minutes.
  6. For added flavor, toss in a bay leaf or a sprig of thyme while simmering.
  7. Let the stew rest for 10 minutes before serving.
