Ingredients
  

  • 1.5 lbs beef chuck, cut into 1-inch cubes
  • 4 medium potatoes, peeled and diced
  • 3 large carrots, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp paprika
  • to taste Salt and pepper
  • 2 tbsp all-purpose flour (optional, for thickening)
  • 1 tbsp olive oil

Method
 

  1. Heat olive oil in a skillet over medium-high heat and sear the beef cubes until browned.
  2. Transfer the browned beef to a slow cooker and add potatoes, carrots, onion, and garlic.
  3. In a mixing bowl, whisk together beef broth, tomato paste, Worcestershire sauce, thyme, paprika, salt, and pepper; pour over the ingredients in the slow cooker.
  4. Cover and cook on low for 8 hours or high for 4-5 hours.
  5. For a thicker stew, mix 2 tablespoons of flour with 2 tablespoons of water and stir into the stew 30 minutes before serving.
  6. Ladle the stew into bowls and serve hot.
