- Heat olive oil in a skillet over medium-high heat and sear the beef cubes until browned.
- Transfer the browned beef to a slow cooker and add potatoes, carrots, onion, and garlic.
- In a mixing bowl, whisk together beef broth, tomato paste, Worcestershire sauce, thyme, paprika, salt, and pepper; pour over the ingredients in the slow cooker.
- Cover and cook on low for 8 hours or high for 4-5 hours.
- For a thicker stew, mix 2 tablespoons of flour with 2 tablespoons of water and stir into the stew 30 minutes before serving.
- Ladle the stew into bowls and serve hot.
