Ingredients
  

  • 1 lb potatoes, peeled and diced
  • 1 large carrot, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 oz sausage, sliced use chicken or turkey sausage for a lighter option
  • 4 cups chicken or vegetable broth
  • 1 cup milk
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • to taste salt and pepper
  • 2 tbsp butter
  • to garnish fresh parsley, chopped

Method
 

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and minced garlic, cooking until softened and fragrant.
  3. Add the sliced sausage to the pot and cook until browned.
  4. Stir in the diced potatoes and carrots, cooking for about 5 minutes.
  5. Pour in the chicken or vegetable broth, and add the dried thyme and rosemary.
  6. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  7. Stir in the milk and season with salt and pepper to taste. Heat through but do not boil.
