Ingredients
  

  • 1 kg mussels about 2.2 lbs
  • 20 cl light cream about 7 fl oz
  • 2 shallots
  • 1 glass white wine
  • q.s. salt and pepper to taste
  • 1 bunch chives and fresh parsley

Equipment

  • Large pot or Dutch oven
  • Colander
  • Knife and cutting board
  • Wooden spoon

Method
 

  1. Rinse the mussels under cold running water to remove any sand and impurities, discarding any that are open and do not close when tapped.
  2. In a large pot, heat a bit of olive oil over medium heat and sauté the finely chopped shallots until translucent and fragrant.
  3. Add the mussels and white wine to the pot, cover, and steam for 5-7 minutes until the mussels open. Discard any that do not open.
  4. Stir in the light cream and chopped chives and parsley, allowing it to simmer for a couple of minutes to meld flavors.
  5. Taste and season with salt and pepper as needed, then transfer to a serving dish and garnish with extra herbs if desired.
