- Preheat your oven to 400°F (200°C). Pat the chicken breasts dry with paper towels and rub them with olive oil, thyme, rosemary, salt, and pepper. Let sit for 10 minutes.
- Heat a large oven-safe skillet over medium-high heat and sear the chicken skin-side down for about 5 minutes until golden brown. Flip and cook for another 2 minutes.
- Transfer the skillet to the oven and roast the chicken for 20-25 minutes until the internal temperature reaches 165°F (74°C). For extra crispy skin, broil for the last 2-3 minutes.
- While the chicken rests, sauté minced garlic in butter in a small saucepan until fragrant. Add chicken broth and reduce by half. Strain the mixture to create a smooth garlic jus.
