Ingredients

  • 4 pieces boneless skin-on chicken breasts
  • 3 tablespoons olive oil
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 2 tablespoons unsalted butter
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • to taste salt
  • to taste freshly ground black pepper

Equipment

  • Oven-safe skillet
  • Tongs
  • Meat thermometer
  • Small saucepan

Method

  1. Preheat your oven to 400°F (200°C). Pat the chicken breasts dry with paper towels and rub them with olive oil, thyme, rosemary, salt, and pepper. Let sit for 10 minutes.
  2. Heat a large oven-safe skillet over medium-high heat and sear the chicken skin-side down for about 5 minutes until golden brown. Flip and cook for another 2 minutes.
  3. Transfer the skillet to the oven and roast the chicken for 20-25 minutes until the internal temperature reaches 165°F (74°C). For extra crispy skin, broil for the last 2-3 minutes.
  4. While the chicken rests, sauté minced garlic in butter in a small saucepan until fragrant. Add chicken broth and reduce by half. Strain the mixture to create a smooth garlic jus.

Notes

For a delicious twist, try substituting bone-in thighs for the chicken breasts. Fresh herbs can brighten the dish, just use three times the amount of fresh compared to dried. Make sure to let the chicken rest for at least 5 minutes after roasting for maximum juiciness. Store any leftovers in an airtight container in the fridge for up to 3 days, or freeze portions for up to 3 months, reheating them gently in the oven or skillet to regain crispiness.
