Ingredients
  

  • 3 eggs eggs
  • 150 g sugar about 6 tablespoons
  • 1 tsp vanilla essence
  • a pinch salt salt
  • 100 g melted butter about 7 tablespoons
  • 100 g natural yogurt about 4.5 tablespoons
  • 240 g flour about 1.5 cups + 1 tablespoon
  • 10 g baking powder about 2 teaspoons
  • 4 apples apples preferably Granny Smith or Honeycrisp
  • 1 tbsp lemon juice
  • 2-3 tbsp apricot jam for decorating

Equipment

  • Large mixing bowl
  • Whisk or electric hand mixer
  • Spatula for folding
  • Vegetable peeler and knife
  • 9-inch round baking pan

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. In a large bowl, crack the eggs and add sugar, vanilla essence, and salt. Beat until pale and fluffy.
  3. Pour cooled melted butter and natural yogurt into the egg mixture; stir until smooth and creamy.
  4. Sift flour and baking powder into a separate bowl, then gradually add to the wet mix, beating gently until combined.
  5. Peel apples, cut into small cubes, and sprinkle with lemon juice to prevent browning.
  6. Fold apple cubes into the batter gently, then pour into a greased 9-inch baking pan.
  7. Bake for about 40 minutes, checking doneness with a toothpick.
  8. Allow the pie to cool for 5 minutes, then glaze with warmed apricot jam.
