Method
- Start by bringing a large pot of salted water to a boil. Once boiling, add the ravioli and cook according to the package instructions, usually about 4-5 minutes. Watch them carefully to avoid overcooking. Drain the ravioli well and set aside.
- Heat the olive oil in a large skillet over medium-high heat. Add the asparagus pieces and sauté for 4-5 minutes until they are tender but still crisp.
- Toss in the cherry tomatoes and minced garlic to the skillet. Sprinkle with salt and pepper to taste. Stir and cook for 2-3 minutes until the tomatoes start to soften slightly.
- Pour in the chicken broth and lemon juice, letting it simmer gently for about 2 minutes. Stir occasionally to ensure the flavors are well combined.
- Add the cooked ravioli to the skillet. Gently toss until the ravioli is well coated with the sauce and veggies.
- Stir in the chopped basil, parsley, and grated Parmesan. Cook for 1-2 minutes until everything is warmed through.
- Plate the ravioli and garnish with extra Parmesan if desired. Serve it hot and enjoy.
