  • 1 pound asparagus, ends trimmed and cut into 2-inch pieces
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced

  • 1/4 cup chicken broth
  • 1 tablespoon lemon juice
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese, plus extra for serving
  • 1 package (20 ounces) refrigerated cheese ravioli

Method
 

  1. Start by bringing a large pot of salted water to a boil. Once boiling, add the ravioli and cook according to the package instructions, usually about 4-5 minutes. Watch them carefully to avoid overcooking. Drain the ravioli well and set aside.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the asparagus pieces and sauté for 4-5 minutes until they are tender but still crisp.
  3. Toss in the cherry tomatoes and minced garlic to the skillet. Sprinkle with salt and pepper to taste. Stir and cook for 2-3 minutes until the tomatoes start to soften slightly.
  4. Pour in the chicken broth and lemon juice, letting it simmer gently for about 2 minutes. Stir occasionally to ensure the flavors are well combined.
  5. Add the cooked ravioli to the skillet. Gently toss until the ravioli is well coated with the sauce and veggies.
  6. Stir in the chopped basil, parsley, and grated Parmesan. Cook for 1-2 minutes until everything is warmed through.
  7. Plate the ravioli and garnish with extra Parmesan if desired. Serve it hot and enjoy.
