Homemade Comforting Mulled Wine

Ingredients
  

  • 1 ¾ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs, at room temperature
  • ½ cup whole milk
  • 2 teaspoons baking powder
  • 1 teaspoon pure vanilla extract
  • a generous pinch salt
  • Frosting of your choice (Buttercream, cream cheese, or a simple glaze)

Equipment

  • Standard 12-cup muffin tin
  • Cupcake/muffin paper liners
  • Large mixing bowl
  • Medium mixing bowl
  • Electric hand mixer or stand mixer
  • Whisk
  • Rubber spatula
  • Wire cooling rack
  • Toothpick or cake tester

Method
 

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, beat softened butter and sugar together until pale yellow and fluffy (about 2-3 minutes).
  3. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Slowly add one-third of the dry mixture to the wet mixture, mix until just combined, followed by half of the milk, and repeat, ending with the flour.
  6. Divide the batter among the cupcake liners about ⅔ full.
  7. Bake for 18-20 minutes until a toothpick comes out clean.
  8. Let the cupcakes cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  9. Once cool, frost and decorate as desired.
