Ingredients
  

  • 2-3 pieces fresh ripe mangoes Choose ripe, fragrant mangoes for maximum sweetness.
  • 1 cup glutinous sweet rice Soak the rice for optimal texture.
  • 1 cup coconut milk Use full-fat coconut milk for best flavor.
  • 1 tbsp extra coconut milk For thickening.
  • 1/4 cup sugar Adjust based on personal preference.
  • 1/4 tsp salt Enhances flavor.
  • 1/2 tsp corn starch For thickening the sauce.
  • 1/2 tsp sesame seeds For garnish.

Method
 

  1. Soak the sweet rice in a bowl with plenty of water for at least 2 hours or overnight.
  2. Drain the rice and steam it over boiling water for 20-30 minutes until soft and sticky.
  3. In a saucepan, combine 1 cup coconut milk, sugar, and salt, and heat until it starts to boil.
  4. Pour half of this sauce into a bowl and set it aside.
  5. Mix the extra tablespoon of coconut milk with the corn starch, then add to the saucepan, cooking until thickened.
  6. Carefully slice the mangoes into long, golden pieces.
  7. Pour the reserved thin coconut sauce over the hot steamed rice and mix gently.
  8. Let the rice sit for 15-20 minutes to absorb the flavors.
  9. Serve the rice next to the mango slices, drizzle the thick coconut sauce over, and garnish with sesame seeds.
