- Take the steak out of the fridge about 30 minutes before cooking and pat it dry with paper towels. Season generously with salt and pepper on both sides.
- Place the cast iron skillet on the stove over medium-high heat. Add the oil and let it shimmer.
- Gently place the steak in the skillet using tongs and cook undisturbed for 3-4 minutes on each side.
- Once the steak is nicely browned, reduce the heat to medium, add butter, garlic, and thyme to the skillet, and spoon the melted butter over the steak for 1-2 minutes.
- (Optional) Transfer the skillet to a preheated oven at 400°F for 3-5 minutes to finish cooking if desired.
- Let the steak rest for at least 5 minutes before slicing to lock in all the delicious juices. Enjoy your perfectly cooked steak!
