Ingredients
  

  • 4 steaks beef tenderloin (about 6–8 ounces each)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons unsalted butter
  • 2 cloves garlic smashed
  • 2 sprigs fresh rosemary

Method
 

  1. Pat the tenderloin steaks dry with paper towels.
  2. Take the steaks out of the fridge 30 minutes before cooking to bring to room temperature.
  3. Sprinkle both sides of the steaks with salt and pepper.
  4. Heat a cast iron skillet or grill over medium-high heat until hot.
  5. Place the steaks in the pan or on the grill and cook undisturbed for 3–4 minutes per side.
  6. Add butter, garlic, and rosemary for basting during the last two minutes of cooking.
  7. Once cooked to your desired doneness, transfer the steaks to a plate and let them rest for 5 minutes.
