Ingredients
  

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup cold buttermilk
  • 1 cup shredded sharp cheddar cheese
  • 2-3 fresh jalapeños, finely diced (seeds removed for less heat)
  • 1 lb ground beef (85/15 is ideal)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • to taste salt and black pepper

Method
 

  1. Brown ground beef in a large skillet over medium heat, breaking it into small crumbles.
  2. Add diced onion and minced garlic to the skillet and cook until the beef is no longer pink and onions are soft.
  3. Stir in the tomato paste, chili powder, cumin, salt, and pepper, and then remove from heat to cool completely.
  4. In a large mixing bowl, whisk together flour, baking powder, and salt.
  5. Cut cold cubed butter into the flour mixture until pea-sized pieces form.
  6. Pour in cold buttermilk and mix until just combined; then fold in cheddar cheese and jalapeños.
  7. Turn dough onto a floured surface and pat into a rough rectangle, about 1/2 inch thick.
  8. Spread cooled beef filling over one half of the dough, then fold the other half over and press edges to seal.
  9. Cut the packet into 8-12 squares with a sharp knife or bench scraper.
  10. Place squares on a parchment-lined baking sheet and bake in a preheated 425°F oven for 18-22 minutes, until golden brown.
  11. Let cool on the pan for at least 10 minutes before serving.
