Ingredients
  

  • 4 ounces bacon or pancetta, diced optional
  • 3 pounds beef (such as chuck), cut into 3 large pieces

  • 1 cup onion, diced
  • 1 cup carrot, diced
  • 1 cup celery, diced
  • 1 tablespoon garlic, chopped
  • 1/2 teaspoon red pepper flakes optional
  • 2 cups beef broth
  • 1 14.5-ounce can crushed tomatoes
  • 1 sprig thyme or 1 teaspoon fresh chopped or 1/2 teaspoon dried
  • 1 sprig rosemary or 1 teaspoon fresh chopped or 1/2 teaspoon dried
  • 1 teaspoon Italian seasoning

Method
 

  1. Cook the bacon in a large oven-safe saucepan over medium heat until crispy, then remove and set aside.
  2. Season the beef with salt and pepper, and brown it in the same pan over medium-high heat.
  3. Add diced onions, carrots, and celery to the pan and sauté for about 7–10 minutes until tender.
  4. Add the chopped garlic and red pepper flakes, sautéing for 1–2 minutes until fragrant.
  5. Pour in the beef broth and crushed tomatoes, then add thyme, rosemary, Italian seasoning, bay leaves, and cooked bacon. Stir to combine and ensure beef is submerged.
  6. Choose a braising method: stovetop (2–4 hours), oven (2–4 hours), or slow cooker (8–10 hours on low, 4–6 hours on high).
