- Preheat your oven to 350°F (175°C) and line an 8x8-inch square baking pan with parchment paper.
- In a mixing bowl, combine 1 cup flour, 1/2 cup softened butter, and 1/4 cup powdered sugar. Mix until the dough resembles coarse crumbs.
- Press the mixture evenly into the bottom of the prepared pan and bake for 15 minutes or until lightly golden.
- While the crust bakes, whisk together 2 large eggs, 1 cup granulated sugar, 2 tablespoons flour, 1/4 cup lemon juice, 1 teaspoon lemon zest, 1/4 teaspoon baking powder, and 1/4 teaspoon salt in a separate bowl.
- Pour the filling mixture over the warm crust once it’s out of the oven.
- Return the pan to the oven and bake for an additional 20-25 minutes until the edges are set and the center has a slight jiggle.
- Let the bars cool completely before slicing and dust with powdered sugar just before serving.
