Lemon Butter Cod

Ingredients
  

  • 4 fillets cod (6 oz each) patted dry
  • 2 tbsp olive oil
  • q.s. Kosher salt to taste
  • q.s. black pepper to taste
  • 4 tbsp unsalted butter
  • 1 juice lemon
  • 2 tbsp fresh herbs finely chopped (parsley, dill, or tarragon)

Method
 

  1. Pat the cod fillets dry with paper towels and season with salt, pepper, and half of the chopped herbs.
  2. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  3. Add the cod fillets to the skillet and cook for 4-5 minutes per side until opaque and flaky.
  4. Transfer the fillets to a plate and keep warm.
  5. Reduce heat to medium and add the butter to the skillet. Once melted, stir in lemon juice and remaining herbs.
  6. Adjust seasoning of the sauce with additional salt and pepper, if necessary.
  7. Pour the lemon butter sauce generously over the cooked cod fillets and serve immediately.
