  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter softened
  • 1 cup granulated sugar
  • 2 large eggs at room temperature
  • 1/2 cup milk whole or 2%
  • 1/4 cup fresh lemon juice about 1-2 lemons
  • 1 tsp pure vanilla extract
  • 1 tsp lemon zest

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a cake or loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream softened butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in lemon zest, lemon juice, and vanilla extract.
  6. Gradually combine the dry ingredients with the wet ingredients, alternating with the milk.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 30-35 minutes for a round pan or 40-50 minutes for a loaf pan until golden brown and a toothpick comes out clean.
  9. Let the cake cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely.
