  • 1/4 cup sun-dried tomatoes
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 tablespoon olive oil
  • to taste Italian herbs
  • to taste Salt
  • to taste Pepper

Method
 

  1. Preheat your oven to 350°F (180°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix flour, baking powder, salt, pepper, and Italian herbs.
  3. In a medium bowl, whisk together egg, milk, and olive oil until smooth.
  4. Gently combine wet ingredients with dry ingredients until just mixed.
  5. Fold in mozzarella, pepperoni, and sun-dried tomatoes.
  6. Fill muffin cups about two-thirds full with batter.
  7. Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  8. Cool in the tin for 5 minutes, then transfer to a wire rack.
