Ingredients
  

  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme, chopped
  • 3 cloves garlic, minced
  • to taste salt and pepper

Method
 

  1. In a bowl, whisk together olive oil, lemon juice, parsley, thyme, garlic, salt, and pepper to make the marinade.
  2. Place the chicken breasts in a resealable plastic bag and pour the marinade over the chicken.
  3. Seal the bag and massage the marinade into the chicken. Refrigerate for at least 30 minutes, up to 2 hours.
  4. Preheat your grill to medium-high heat.
  5. Remove the chicken from the marinade and discard the excess. Place the chicken on the preheated grill.
  6. Cook for 6-8 minutes per side or until the internal temperature reaches 165°F (74°C).
  7. Remove the chicken from the grill and let it rest for 5 minutes before serving. Garnish with lemon wedges and additional parsley if desired.
