Ingredients
  

  • 3 large eggs, separated
  • 125 g butter, softened about 1/2 cup
  • 125 g powdered sugar about 1 cup
  • 15 ml lemon juice 1 tablespoon
  • 3 g vanilla powder or extract 1 teaspoon
  • 65 g all-purpose flour about 1/2 cup
  • 7 g cornstarch 1 tablespoon
  • 3 g baking powder 1 teaspoon
  • 500 g cream cheese full-fat for best results

Equipment

  • Electric hand mixer or stand mixer
  • Large and medium mixing bowls
  • Rubber spatula for folding
  • 16cm (6-inch) springform pan
  • Whisk

Method
 

  1. Preheat your oven to 170°C (340°F) and prepare a 16cm springform pan by greasing it lightly with butter and lining the bottom with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and powdered sugar, then mix in the vanilla; beat for 3-4 minutes.
  3. Add the egg yolks into the butter mixture and mix until just combined; then add in the cream cheese and mix until smooth.
  4. In a medium bowl, whisk together the flour, cornstarch, and baking powder.
  5. In a clean bowl, whip the egg whites with lemon juice until stiff peaks form.
  6. Gently fold the dry ingredients into the cream cheese mixture, followed by one-third of the whipped egg whites; then fold in the remaining egg whites.
  7. Pour the batter into the prepared pan, smooth the top, and bake for 40 minutes until golden brown with a slight jiggle in the center.
  8. Cool the cheesecake in the oven with the door cracked for about an hour, then transfer it to a wire rack to cool completely before refrigerating for at least 4 hours.
