Ingredients
  

  • 200 g Cheddar cheese or any good melting cheese
  • 50 cl heavy cream or crème fraîche
  • 1 tablespoon all-purpose flour
  • 1 teaspoon Dijon mustard is perfect
  • to taste Salt
  • to taste Pepper
  • a handful fresh herbs optional

Equipment

  • Heavy-bottomed saucepan
  • Whisk
  • Wooden spoon or silicone spatula
  • Box grater
  • Measuring spoon set

Method
 

  1. Gently warm the heavy cream in a small saucepan over medium heat, avoiding a boil.
  2. Grate the cheese and set aside.
  3. Sprinkle the flour over the warm cream and whisk vigorously to thicken.
  4. Reduce the heat to low and gradually add the grated cheese, stirring constantly until melted and smooth.
  5. Stir in the mustard and season with salt and pepper to taste.
  6. Optionally, add finely chopped fresh herbs and give a final stir.
  7. Serve immediately over hot, crispy fries.
