- Start by peeling and cubing the potatoes. Place them in a large pot of salted water and bring to a boil. Cook until they're nice and tender, about 15-20 minutes. Drain the water and return the potatoes to the pot.
- Mash the potatoes until they’re smooth. Add the melted butter, sour cream, and milk. Stir in the garlic powder, salt, and pepper.
- Stir in 1 cup of shredded cheddar cheese and half of the cooked bacon bits. Mix everything together until the cheese starts to melt and the bacon bits are well distributed.
- Transfer the mashed potato mixture into a greased 9x13-inch baking dish. Sprinkle the remaining cheddar cheese and bacon bits over the top. Bake at 350°F (175°C) for 20-25 minutes, or until the cheese is melted and bubbly. Garnish with fresh chives before serving.
