Ingredients
  

  • 1 lb shrimp, peeled and deveined
  • 1/2 lb lump crab meat
  • 1/2 lb lobster meat, chopped
  • 4 tbsp butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup all-purpose flour
  • 3 cups seafood or chicken broth
  • 1 cup heavy cream
  • 2 tbsp tomato paste
  • 1 tsp Old Bay seasoning (optional)
  • to taste Salt and pepper
  • for garnish Fresh parsley or chives

Method
 

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and sauté for 2-3 minutes until softened.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Sprinkle the flour over the onion and garlic mixture, stirring constantly.
  5. Cook for 1-2 minutes to eliminate the raw flour taste.
  6. Gradually pour in the seafood or chicken broth, whisking to combine.
  7. Stir in the tomato paste and bring to a gentle simmer.
  8. Add the Old Bay seasoning, salt, and pepper.
  9. Simmer for 10 minutes, allowing the flavors to meld.
  10. Add the shrimp and lobster meat to the pot and cook for 3-4 minutes until the shrimp are pink and opaque.
  11. Gently fold in the lump crab meat.
  12. Lower the heat and stir in the heavy cream.
  13. Simmer gently for 2-3 minutes, being careful not to boil.
  14. Ladle the bisque into bowls and garnish with fresh parsley or chives.
