  • 1 tsp garlic powder
  • 1 piece fresh lime, juice
  • 1-2 pieces avocado, sliced (for garnish)
  • 1 cup shredded cheese (e.g., Monterey Jack or queso)
  • as needed amount tortilla strips (store-bought or homemade)

Method
 

  1. Prep your ingredients: dice the onion, mince garlic, and chop tomatoes.
  2. Optional: Roast tomatoes in the oven at 400°F for 15 minutes for added flavor.
  3. In a pot, bring water to a boil and cook chicken until done, then shred with forks.
  4. Heat oil in a large pot over medium heat; sauté diced onions until golden brown.
  5. Add minced garlic and spices (chili powder, cayenne, cumin, garlic powder) and stir for 1-2 minutes.
  6. Pour in chicken broth and add roasted or canned tomatoes; bring to a boil.
  7. Reduce heat and simmer for 20 minutes.
