Ingredients
  

  • 2 pounds ground beef (80/20 or 85/15 lean to fat ratio)
  • 3/4 cup plain breadcrumbs
  • 2 large eggs
  • 1/2 cup milk or beef broth
  • 1 medium onion diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup ketchup for topping
  • 1/4 cup brown sugar for topping

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, break the ground beef into chunks and add breadcrumbs, diced onion, eggs, milk, salt, and pepper.
  3. Use a fork to lightly break the eggs and distribute before gently mixing everything together by hand.
  4. Shape the mixture into a freeform loaf on a lined baking sheet, about 9 inches long, 5 inches wide, and 3 inches tall.
  5. Brush half of the ketchup and brown sugar mixture on top of the meatloaf.
  6. Bake in the preheated oven for 55 to 65 minutes, or until the internal temperature reaches 160°F (71°C).
  7. About 15 minutes before it's done, brush on the remaining glaze.
  8. Once out of the oven, let the meatloaf rest for at least 10 minutes before slicing.
