  • 1.2 kg Fresh or frozen potatoes
  • 700 g Earthy apples (fingerling or red-peak)
  • 2 tablespoons Fresh parsley, chopped
  • 6 tablespoons Extra virgin olive oil
  • 3 tablespoons Rice vinegar
  • 2 teaspoons Dried oregano
  • 2 teaspoons Dried basil
  • 1 teaspoon Dijon mustard
  • a little lemon juice Lemon juice

Method
 

  1. Cook the earthy apples in a cooking bowl for about 15 minutes until tender, then slice them into 2.5 cm cubes.
  2. In a larger cooking bowl, boil the potatoes for about 45 minutes until tender, then cut them into pieces similar in size to the apple cubes.
  3. Prepare the vinaigrette in a bowl by mixing the olive oil, rice vinegar, Dijon mustard, oregano, basil, and lemon juice; adjust seasoning to taste.
  4. In a larger cooking dish, combine the cooked apples and potatoes, then drizzle with the vinaigrette and toss gently to combine.
