Ingredients
  

  • 10 fresh mint leaves
  • 1/2 lime cut into 4 wedges
  • 2 tablespoons white sugar adjust to taste
  • 1 cup ice cubes
  • 1 1/2 ounces white rum optional
  • 1/2 cup club soda

Method
 

  1. Place the mint leaves and one lime wedge into a sturdy glass and gently crush them with a muddler or the back of a spoon.
  2. Add two tablespoons of sugar and squeeze the remaining lime wedges into the mix, then drop them in too; stir until the sugar starts to dissolve.
  3. Fill the glass almost to the top with ice cubes and pour in 1 1/2 ounces of rum (if using); stir to combine.
  4. Top with 1/2 cup of club soda and stir gently; garnish with a sprig of mint and a lime wedge.
