- Start by slicing the onions, crushing the garlic, and chopping the veggies into evenly sized pieces.
- In a large bowl, mix the chicken thighs with cumin, turmeric, cinnamon, salt, and pepper. Let them sit for at least 30 minutes.
- Heat olive oil in a tagine or large pot over medium heat. Add the onions and sauté until translucent and slightly golden.
- Toss in the garlic and spices, and cook for another minute or two.
- Nestle the marinated chicken thighs into the pot, arrange them among the veggies, and pour in the crushed tomatoes and water.
- Bring to a boil, then lower the heat and let it simmer gently.
- After 45 minutes to an hour, stir in the fresh cilantro just before serving.
