- Preheat your oven to 375°F (190°C).
- Carefully slice the loaf of French bread in half lengthwise and lay the halves cut-side up on a large baking sheet.
- In a small bowl, combine softened butter, minced garlic, and fresh parsley, then spread this mixture generously over the cut surfaces of the bread.
- Toast the bread in the preheated oven for about 5 to 7 minutes until light golden and slightly crisp.
- Heat a large skillet or pan over medium-high heat, add a little oil, and sauté sliced onions and bell peppers until softened and browned.
- Add the thinly sliced ribeye steak to the skillet, season with salt and pepper, and cook until the steak is no longer pink and browned.
- Divide the steak and veggie mixture evenly over the toasted bread halves.
- Sprinkle shredded provolone cheese liberally over the steak mixture.
- Return the loaded bread to the oven and bake for another 5 minutes or until cheese is melted and bubbly.
- Slice into portions and serve immediately.
