- Soak the dried apricots in cold water for 15–20 minutes, then drain and finely dice them.
- In a large mixing bowl, combine rolled oats, seeds, and chopped nuts.
- Add the chopped apricots, honey, egg white, and a pinch of salt to the dry mixture and stir until the dough comes together.
- Roll small portions of the dough into balls and flatten them onto a lined baking sheet.
- Bake at 180°C (360°F) for 15–20 minutes until golden brown.
