Ingredients
  

  • 70 g dried apricots
  • 50 g almonds
  • 70 g rolled oats
  • 30 g pumpkin seeds
  • 40 g sunflower seeds
  • 20 g sesame seeds
  • 20 g flaxseeds
  • 60 g cashews
  • 20 g pistachios
  • 20 g walnuts
  • 20 ml honey
  • 1 egg white
  • 1 pinch salt

Method
 

  1. Soak the dried apricots in cold water for 15–20 minutes, then drain and finely dice them.
  2. In a large mixing bowl, combine rolled oats, seeds, and chopped nuts.
  3. Add the chopped apricots, honey, egg white, and a pinch of salt to the dry mixture and stir until the dough comes together.
  4. Roll small portions of the dough into balls and flatten them onto a lined baking sheet.
  5. Bake at 180°C (360°F) for 15–20 minutes until golden brown.
