Ingredients
  

  • 1 large yellow or white onion peeled, halved, and thinly sliced
  • 1 teaspoon salt for the onions
  • 1 pound ground beef 80/20
  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
  • 4-8 slices American cheese or your favorite melty cheese
  • to taste Mayonnaise for serving
  • to taste mustard for serving
  • to taste pickles for serving
  • to taste black pepper

Equipment

  • Large skillet or cast-iron pan
  • Colander
  • Clean kitchen towel
  • Spatula
  • Hamburger buns toasted

Method
 

  1. Toss thinly sliced onions with salt in a colander and let sit for 30 minutes to draw out moisture.
  2. Squeeze the onions in a kitchen towel to remove excess liquid.
  3. Divide squeezed onions into four equal mounds and form four loose balls with the ground beef.
  4. Press each beef ball onto an onion mound to create patties, seasoning with salt and pepper.
  5. Heat a skillet over medium heat and add butter and oil.
  6. Place patties onion-side down in the skillet and cook for 4-5 minutes without moving.
  7. Flip patties and cook for an additional 3-4 minutes, then add cheese on top to melt.
  8. Toast the hamburger buns and assemble the burgers with mayo, mustard, pickles, and the cheesy patties.
