Creamy no-bake Carlota de Limón. Simple, refreshing lemon dessert. Like an Oreo Chocolate Trifle but with citrus sunshine. Ready in 15 mins.

Ingredients
  

  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 225 g (about 1 cup) media crema (half cream)
  • 150 g (about 5.3 oz) Philadelphia cream cheese, softened
  • Juice of 4 large lemons lemon juice strained
  • 30 cookies Maria cookies or about one standard package

Equipment

  • Blender or food processor
  • Rectangular mold (8x8 inch) or trifle bowl
  • Juicer or reamer for lemons
  • Fine mesh strainer
  • Spatula

Method
 

  1. Blend the condensed milk, evaporated milk, half cream, and softened cream cheese until smooth.
  2. Slowly pour in the strained lemon juice while blending on low speed.
  3. In a rectangular baking dish or trifle bowl, pour a thin layer of the creamy mixture at the bottom.
  4. Arrange a single layer of Maria cookies over the cream, breaking some to fill gaps.
  5. Cover the cookies with a generous amount of cream, then repeat the layers until finished with a top layer of cream.
  6. Cover tightly with plastic wrap and refrigerate for at least 3 hours, preferably overnight.

Notes

Use fresh lemons for the best flavor. Roll them on the counter before juicing for maximum juice yield.
