- Pat the sirloin dry with paper towels and season both sides generously with salt and pepper. Let sit at room temperature for 15 minutes.
- Heat a heavy skillet over medium-high heat and add olive oil.
- Place the steaks in the pan and sear for about 3 minutes on one side.
- Flip the steaks and add garlic, thyme, and butter to the pan. Baste the steaks with melted butter.
- Once the steaks reach your desired doneness, transfer them to a plate and let rest for 5 minutes before slicing.

Notes
