Ingredients

  • 200 g all-purpose flour unbleached recommended
  • 5 g baking soda
  • 2.5 g salt
  • 150 g sugar (brown sugar for extra moisture if desired)
  • 115 g unsalted butter melted
  • 3 large ripe bananas mashed
  • 2 large eggs beaten
  • 5 g vanilla extract

Equipment

  • Loaf pan
  • Mixing bowls
  • Whisk
  • Toothpick for testing doneness
  • Parchment paper for lining the pan

Method

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan (line with parchment paper for easy cleanup).
  2. In a large bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, mix the melted butter, sugar, eggs, vanilla extract, and mashed bananas.
  4. Combine the wet and dry ingredients, mixing just until combined (a few lumps are okay).
  5. Pour the batter into the prepared loaf pan.
  6. Bake for about 60 minutes, checking for doneness with a toothpick (should come out clean or with a few crumbs).
  7. If the top browns too quickly, loosely cover it with aluminum foil.
  8. Let cool slightly before slicing and serving.
