- Preheat oven to 400°F (200°C) and grease a 9x13 inch baking dish.
- Place chicken breasts between plastic wrap and pound to 1/2-inch thickness.
- Mix olive oil and spices, then brush over both sides of the chicken.
- In a bowl, combine spinach, roasted red peppers, 1/2 cup mozzarella, ricotta, Parmesan, and beaten egg.
- Stuff chicken with filling, roll tightly, and secure with toothpicks.
- Heat butter in a large skillet and sear chicken rolls for 2-3 minutes on each side.
- Make the cheese sauce by melting butter, whisking in flour, then gradually adding chicken broth and milk.
- Stir in heavy cream and remaining mozzarella until smooth.
- Pour sauce over seared chicken and bake for 20-25 minutes until cooked through.
- Let chicken rest for 5 minutes before serving and remove toothpicks.
