Ingredients
  

  • 1 20 oz can crushed pineapple undrained
  • 1 package instant vanilla pudding mix 3.4 oz
  • 1 cup miniature marshmallows
  • 1 cup sweetened shredded coconut
  • 1 8 oz container frozen whipped topping thawed
  • 1 cup chopped pecans optional, but recommended
  • 1 cup maraschino cherries halved, optional, for color & fun

Equipment

  • Large mixing bowl
  • Sturdy spatula or large spoon
  • Measuring cups
  • Plastic wrap or a lid for the bowl
  • Serving bowl or individual dishes

Method
 

  1. In a large mixing bowl, pour in the undrained crushed pineapple and sprinkle the instant vanilla pudding mix over it. Stir until smooth.
  2. Fold in the miniature marshmallows and sweetened shredded coconut gently.
  3. Add the thawed whipped topping and fold until just combined, being careful not to over-mix.
  4. If using, add the chopped pecans and halved cherries, folding gently to distribute.
  5. Cover the bowl tightly with plastic wrap and refrigerate for at least 1 hour.
  6. Serve chilled, garnishing with extra cherry halves and a sprinkle of coconut or pecans if desired.
