Ingredients
  

  • 250 g mascarpone
  • 80 g powdered sugar
  • 3 eggs
  • 2 tablespoons pistachio paste

Method
 

  1. Separate the egg yolks from the whites.
  2. Whisk the yolks with the powdered sugar until pale yellow.
  3. Add the mascarpone and pistachio paste, blending until smooth.
  4. In another bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the egg whites into the mascarpone mixture.
  6. Layer soaked ladyfingers at the bottom of a serving dish.
  7. Spread half of the mascarpone mixture on top of the ladyfingers.
  8. Repeat the layers and finish with a dollop of cream.
  9. Sprinkle crushed pistachios on top for garnish.
  10. Chill in the refrigerator for at least 4 hours before serving.
