Ingredients
  

  • 1 cup ground graham crackers
  • 1 tbsp sugar
  • 5 tbsp melted butter
  • 8 oz cream cheese softened
  • 1/2 cup powdered sugar
  • 2 tsp vanilla extract
  • 1 cup heavy whipping cream
  • q.s. caramel sauce store-bought or homemade
  • 6 oz semi-sweet chocolate chopped
  • 1/4 cup heavy cream
  • q.s. chopped almonds for garnish
  • q.s. mini chocolate chips for garnish

  • Muffin tin or mini cheesecake pan
  • Paper muffin liners optional
  • Two mixing bowls
  • Electric mixer or whisk
  • Microwave-safe bowl or double boiler

Method
 

  1. Mix graham cracker crumbs, sugar, and melted butter in a bowl and press into the bottom of a muffin tin lined with paper liners; chill.
  2. In a large bowl, beat softened cream cheese, powdered sugar, and vanilla until smooth. Whip the heavy cream separately to stiff peaks and fold into the cream cheese mixture.
  3. Spoon or pipe the filling onto the chilled crusts, smoothing the tops, and return to the fridge to chill briefly.
  4. For the ganache, combine chopped chocolate and heavy cream in a microwave-safe bowl; heat until smooth and glossy. Cool slightly before pouring over each cheesecake.
  5. Drizzle caramel sauce over the ganache and sprinkle with chopped almonds and mini chocolate chips.
  6. Refrigerate for at least 2-3 hours before serving.
