Method
 

  1. Remove pork tenderloin from the fridge and let it sit for 30 minutes.
  2. Preheat the oven to 400°F.
  3. Pat the pork tenderloin dry with paper towels.
  4. Season generously with salt and pepper (and optional spices).
  5. Heat an oven-safe skillet over medium-high heat with oil.
  6. Sear the tenderloin on all sides until golden brown (about 8-10 minutes total).
  7. Transfer the skillet to the oven uncovered for about 10 minutes.
  8. Tent the meat loosely with aluminum foil and continue cooking until it reaches 140°F.
  9. Remove from the oven and let it rest covered for 10 minutes before slicing.
  10. Slice the pork and serve.
