  • 1 cup mashed pumpkin fresh or canned

  • 1 unit egg lightly beaten
  • 1 tsp dried thyme
  • 1 tsp garlic powder

  • to taste pepper
  • 2 tbsp olive oil for frying

Method

  3. Roll spoonfuls of the mixture into bite-sized balls and flatten them slightly to create discs.
  4. Heat olive oil in a skillet over medium heat.
  5. Carefully add the shaped bites to the skillet, ensuring they don’t crowd the pan.
  6. Cook for 3-4 minutes per side until golden and crisp.
  7. Transfer the cooked bites to a paper towel-lined plate to absorb excess oil.
