- In a small bowl, combine soy sauce, dark soy sauce, sugar, white pepper, and water. Mix well until the sugar is fully dissolved.
- Prepare the fresh noodles according to the package instructions. Blanch them in boiling water or use hot tap water to loosen them. Rinse under cold water and drain.
- Heat the neutral oil in a wok or large pan over medium heat. Add the minced garlic and the white parts of the green onions. Stir until fragrant.
- Add the prepared noodles to the wok and mix them with the aromatics. Pour the sauce over the noodles and stir-fry for about 2-3 minutes.
- Add the bean sprouts, the reserved green parts of the green onion, and a drizzle of sesame oil. Toss everything together and cook for another minute.
