Ingredients
  

  • 400 grams Fresh noodles Hong Kong-style, Shanghai, chow mein, or egg noodles
  • 2 tbsp Neutral oil vegetable, avocado, peanut, canola, grapeseed, sunflower, or corn oil
  • 3 cloves Garlic minced
  • 4 stalks Green onions sliced
  • 200 grams Bean sprouts
  • 3 tbsp Soy sauce
  • 1 tbsp Dark soy sauce
  • 1 tsp Sugar
  • 1 tsp White pepper or black pepper
  • 1 tbsp Water
  • 1 tsp Sesame oil
  • 1 tbsp Sesame seeds for garnish

Equipment

  • Wok or large pan
  • Colander
  • Bowl for the sauce
  • Measuring spoons and cups
  • Wooden spoon or spatula

Method
 

  1. In a small bowl, combine soy sauce, dark soy sauce, sugar, white pepper, and water. Mix well until the sugar is fully dissolved.
  2. Prepare the fresh noodles according to the package instructions. Blanch them in boiling water or use hot tap water to loosen them. Rinse under cold water and drain.
  3. Heat the neutral oil in a wok or large pan over medium heat. Add the minced garlic and the white parts of the green onions. Stir until fragrant.
  4. Add the prepared noodles to the wok and mix them with the aromatics. Pour the sauce over the noodles and stir-fry for about 2-3 minutes.
  5. Add the bean sprouts, the reserved green parts of the green onion, and a drizzle of sesame oil. Toss everything together and cook for another minute.

Notes
