Ingredients
  

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets

Method
 

  1. Rinse the quinoa under cold water in a fine-mesh strainer.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the chopped onion and sauté until translucent.
  4. Toss in the minced garlic and cook for another minute until fragrant.
  5. Add the rinsed quinoa to the skillet and toast it for 2–3 minutes.
  6. Pour in the vegetable broth, bring to a boil, then reduce heat to low.
  7. Cover and simmer for about 15 minutes until the quinoa is fluffy and the liquid is absorbed.
  8. Stir in the bell pepper, mushrooms, tomatoes, and broccoli.
  9. Cover and cook for another 5–7 minutes until the veggies are tender.
  10. Season with salt and pepper to taste.
  11. Garnish with fresh parsley before serving.
