Ingredients
  

  • 2 cups corn flake cereal not the sweetened kind
  • 1 cup milk
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 tsp salt
  • 1 cup neutral oil like vegetable, canola, or melted coconut oil
  • 1 tbsp baking powder
  • 4-6 oz cream cheese for topping

Equipment

  • Whisk or wooden spoon
  • Measuring cups and spoons
  • 8-inch or 9-inch round cake pan
  • Two large mixing bowls
  • Toothpick or cake tester for doneness

Method
 

  1. In a large mixing bowl, combine the corn flakes and milk. Stir gently and let rest for 10 minutes.
  2. In a second bowl, beat eggs, sugar, and salt until pale and frothy. Stream in oil while mixing until smooth.
  3. Pour the egg and oil mixture into the bowl with the soaked corn flakes, and stir gently to combine. Sprinkle baking powder over the top and fold in.
  4. Grease an 8-inch or 9-inch round cake pan. Pour the batter in and dot with small spoonfuls of cream cheese.
  5. Preheat your oven to 350°F (180°C) and bake for 35-40 minutes until golden brown and a toothpick comes out clean.
  6. Allow the cake to cool completely in the pan for at least an hour before removing it.
