  • 4 tbsp white sugar
  • 2 tbsp heavy cream crème fraîche épaisse
  • 1 tsp pure vanilla extract
  • 0.25 tsp ground cinnamon optional

Method
 

  1. Pour the milk into a large, heavy-bottomed saucepan and warm it over low to medium-low heat until just steaming.
  2. Chop the dark chocolate into small, even pieces and add it to the hot milk.
  3. Let the chocolate sit in the warm milk for a minute, then whisk until smooth.
  4. Stir in the heavy cream and return to low heat, whisking gently until combined.
  5. Sprinkle in the sugar, vanilla extract, and optional cinnamon, whisking until dissolved and blended.
