Ingredients
  

  • 3 medium beets peeled and cut into wedges
  • 3 medium carrots peeled and cut into sticks
  • 2 cups arugula or mixed greens
  • 4 oz burrata cheese
  • 2 tbsp olive oil
  • 1/4 cup toasted nuts optional
  • to taste salt and black pepper

  • Baking sheet
  • Parchment paper
  • Sharp knife and cutting board
  • Small bowl

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the beet wedges and carrot sticks with 2 tablespoons of olive oil, salt, and black pepper.
  3. Spread the vegetables out on a baking sheet lined with parchment paper.
  4. Roast in the oven for 30 minutes, turning halfway through, until tender and caramelized.
  5. In a small bowl, whisk together 3 tablespoons of olive oil, 1 tablespoon of balsamic vinegar, 1 tablespoon of honey, 1 teaspoon of Dijon mustard, salt, and pepper until smooth.
  6. On a large serving platter, arrange the arugula or mixed greens.
  7. Top with the roasted beets and carrots, then tear the burrata into pieces and scatter it over the top.
  8. Drizzle the vinaigrette over the salad.
  9. Sprinkle with the toasted nuts (if using) and chopped fresh basil or parsley.
  10. Finish with a sprinkle of lemon zest and serve immediately.
