- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the beet wedges and carrot sticks with 2 tablespoons of olive oil, salt, and black pepper.
- Spread the vegetables out on a baking sheet lined with parchment paper.
- Roast in the oven for 30 minutes, turning halfway through, until tender and caramelized.
- In a small bowl, whisk together 3 tablespoons of olive oil, 1 tablespoon of balsamic vinegar, 1 tablespoon of honey, 1 teaspoon of Dijon mustard, salt, and pepper until smooth.
- On a large serving platter, arrange the arugula or mixed greens.
- Top with the roasted beets and carrots, then tear the burrata into pieces and scatter it over the top.
- Drizzle the vinaigrette over the salad.
- Sprinkle with the toasted nuts (if using) and chopped fresh basil or parsley.
- Finish with a sprinkle of lemon zest and serve immediately.
