Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the carrots, then slice them diagonally into evenly sized pieces.
  3. Pat the carrots dry with a paper towel.
  4. In a large bowl, toss the carrots with olive oil, garlic powder, smoked paprika, thyme, salt, and pepper until coated.
  5. Spread the seasoned carrots on a baking sheet lined with parchment paper in a single layer.
  6. Roast in the oven for 20-25 minutes, flipping halfway through.
  7. (Optional) Broil the carrots for 2 minutes for extra crispiness.
  8. Add a splash of balsamic vinegar during the last 5 minutes of roasting for added flavor.
