Method
- Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
- Place cauliflower florets on the tray, drizzle with olive oil, and sprinkle with minced garlic, salt, and pepper. Toss to coat.
- Roast cauliflower in the oven for about 25 minutes until tender and lightly browned.
- While roasting, heat a large pot over medium heat and add a tablespoon of olive oil.
- Sauté the thinly sliced onion until translucent and soft.
- Once the cauliflower is done, add it to the pot with the onions and pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for about 10 minutes.
- Blend the soup using an immersion blender until smooth and creamy.
- Stir in the shredded cheddar cheese until melted. Optionally, add sour cream for extra creaminess.
- Season with salt and pepper to taste, then ladle the soup into bowls.
- Garnish with chopped chives and serve hot.
