- Preheat your oven to 425°F (220°C) and prepare a rimmed baking sheet with cooking spray or parchment paper.
- In a small saucepan, melt the butter over low heat and add sliced garlic, Italian seasoning, salt, and pepper, stirring gently.
- Place the carrot pieces in a mixing bowl and toss with the butter mixture, then sprinkle the parmesan cheese over and mix again.
- Spread the carrots in a single layer on the baking sheet and roast for 20–25 minutes, flipping halfway through.
- Remove from the oven, adjust seasoning if needed, and top with fresh parsley before serving.
