Ingredients
  

  • 900 g Carrots, cut diagonally into 3-inch pieces
  • 4 tbsp Butter
  • 4 cloves Garlic, thinly sliced
  • 1 tsp Italian seasoning
  • 1 tsp Salt adjust to taste
  • 0.5 tsp Black pepper, freshly ground
  • 0.5 cup Parmesan cheese, grated
  • 0.25 cup Parsley, chopped fresh

  • Mixing bowls
  • Cooking spray or parchment paper
  • Tongs or spatula

Method
 

  1. Preheat your oven to 425°F (220°C) and prepare a rimmed baking sheet with cooking spray or parchment paper.
  2. In a small saucepan, melt the butter over low heat and add sliced garlic, Italian seasoning, salt, and pepper, stirring gently.
  3. Place the carrot pieces in a mixing bowl and toss with the butter mixture, then sprinkle the parmesan cheese over and mix again.
  4. Spread the carrots in a single layer on the baking sheet and roast for 20–25 minutes, flipping halfway through.
  5. Remove from the oven, adjust seasoning if needed, and top with fresh parsley before serving.
