- Preheat your oven to 200°C (about 400°F) and line your baking tray with parchment paper.
- Wash and thinly slice the leeks and onion. Heat olive oil in a pan over medium heat and sauté the onion until translucent, then add the leeks and cook gently for about 10 minutes.
- Cut the salmon into small bite-sized pieces or flake if using smoked salmon.
- In a mixing bowl, combine the cooked leeks, salmon, crème fraîche, salt, and pepper. Adjust seasoning to taste.
- Roll out the puff pastry on a lightly floured surface and spread the filling evenly in the center, leaving space around the edges. Fold over the edges to seal and use a fork to create a decorative pattern.
- Brush the top with beaten egg yolk and make a few slits on top.
- Bake for 25–30 minutes or until golden brown and puffed.
