Ingredients

  • 1 package puff pastry
  • 200 g fresh or smoked salmon
  • 2 pieces leeks
  • 100 g crème fraîche
  • 1 piece onion
  • 1 piece egg yolk
  • to taste salt and pepper
  • a little olive oil

Equipment

  • Oven-safe baking tray
  • Parchment paper
  • Sharp knife
  • Mixing bowls
  • Rolling pin

Method

  1. Preheat your oven to 200°C (about 400°F) and line your baking tray with parchment paper.
  2. Wash and thinly slice the leeks and onion. Heat olive oil in a pan over medium heat and sauté the onion until translucent, then add the leeks and cook gently for about 10 minutes.
  3. Cut the salmon into small bite-sized pieces or flake if using smoked salmon.
  4. In a mixing bowl, combine the cooked leeks, salmon, crème fraîche, salt, and pepper. Adjust seasoning to taste.
  5. Roll out the puff pastry on a lightly floured surface and spread the filling evenly in the center, leaving space around the edges. Fold over the edges to seal and use a fork to create a decorative pattern.
  6. Brush the top with beaten egg yolk and make a few slits on top.
  7. Bake for 25–30 minutes or until golden brown and puffed.
