  • 2 cans salmon drained and flaked
  • 1 small onion finely diced
  • 6 tablespoons mayonnaise
  • 6 tablespoons flour
  • 6 tablespoons cornmeal
  • q.s. oil for frying

Method
 

  1. In a large bowl, mix the drained and flaked salmon, finely diced onion, beaten eggs, mayonnaise, flour, and cornmeal until thick but pliable.
  2. Using your hands, form the mixture into small, round patties about 4 inches in diameter and ½ inch thick.
  3. Heat a generous amount of oil in a skillet over medium heat until hot enough to sizzle when the patty is added.
  4. Carefully place the patties in the hot oil and fry for about 3-4 minutes on each side until golden brown and crispy.
